Sasha Wizansky tasted 16 parts of a pig in one sitting. The meat
came from Marlow and Daughters, and was prepared by David
Webber[].
Wizansky set the record on August 12, 2009 at a World Record
Appreciation Society[] event in New York City. Dan Rollman and Corey
Henderson were present as witnesses.
The pig parts Wizansky tasted: tenderloin, flank, shoulder, spare rib,
jowl, shank, loin, tongue, belly, cheek, heart, trotter, head cheese,
skin, ear, and tail.

While we do make these parts seem a bit eerie and gross, its important to note that these are also some of the tastiest and most tender parts of the animal. The tail has that perfect ratio of meat and melt in your mouth fat. One heart is inexpensive and can feed at least two people and has a flavorful porky taste and texture. Anyone who sticks to the chop, tenderloin, and ribs their whole lives will miss so much of what the pig has to offer. Eating nose to tail also ensures that its life was not wasted by taking advantage of the whole animal. Head Cheese and ear might seem scary at first, but they're a real win-win, and once you start eating them, you'll keep coming back for more.
